2 tablespoons oil
1 medium onion, chopped
2 stalks celery, chopped
1 red or green bell pepper, chopped
6 ounces andouille or other spicy sausage, sliced
3 tablespoons all purpose flour
4 cups chicken broth
1 tablespoon GravyMaster®
½ teaspoon dried thyme
3 cups chopped cooked turkey
1 package (10 oz) sliced okra, defrosted
1. In Dutch oven or heavy large saucepan, heat oil and cook onion, celery, pepper and sausage over medium high heat until vegetables are tender; about 8 minutes.
2. Stir in flour, cook, stirring constantly 2 minutes. Gradually add broth, stirring constantly. Stir in GravyMaster® and thyme and bring just to boiling point.
3. Reduce heat; add turkey and okra and simmer 15 minutes. Serve, if desired, with hot cooked rice and sliced green onions.
