Turkey Minestrone


1 tablespoon olive oil

1 medium onion, chopped

1 ½ teaspoons GravyMaster®

1 can (14.5 ounces) diced tomatoes with juice

2 tablespoons tomato paste

4 ½ cups chicken broth

2 stalks celery, thinly sliced

3 large carrots, peeled and diced

1 cup green beans, cut into 1 inch pieces

1 medium zucchini, diced

2 cups diced roast turkey

1 can (15.5 ounces) white cannellini beans, drained and rinsed

½ cup ditalini pasta, or other small pasta shape

½ cup grated Parmesan cheese

Salt and ground black pepper to taste



1.      In a large saucepan, sauté onion in the olive oil over medium heat until translucent; about 5 minutes.  Add all the remaining ingredients except for pasta and cheese. Cover and simmer for 40 minutes, until vegetables are soft. Season to taste with salt and pepper.

2.      Add the pasta to the soup and cook for 10 minutes or until the pasta is al dente.  Spoon into serving bowls and sprinkle grated cheese over top before serving.
