Turkey Pot Pie

Turkey Pot Pie      



2 tablespoons butter

1 cup chopped yellow onion

1 ½ teaspoons GravyMaster®

2 tablespoons all purpose flour

2 cups chicken broth

2 packages (10 ounces each) frozen mixed vegetables, thawed

2 cups diced roasted turkey

Salt and pepper to taste

3 cups prepared mashed potatoes

¼ cup minced parsley



1)      Preheat oven to 350°F.  Melt the butter in a large saucepan over medium heat. Add the onion and sauté until translucent, about 5 minutes.  Stir in the GravyMaster® followed by the flour.

2)      Cook over low heat, stirring constantly for 2 minutes.  Add the broth and stir with a whisk until sauce thickens and is smooth.

3)      Add the vegetables and diced turkey to the sauce, stirring to combine. Season with salt and pepper.  Spoon mixture into a 9x13 inch baking dish.

4)      In a medium bowl combine the mashed potatoes and parsley. Spread over the filling. Bake 35-40 minutes until top begins to brown.


Makes about 8 servings
